SHAPING RUSTICO
Rustico has been shaped, formed and preserved since 2005 by a wonderfully diverse group of people who share a common value of hard work, dedication to excellence, and pride in producing authentic sourdough loaves for the community.
INGREDIENTS
Rustico is committed to sourcing practices that support regenerative agriculture and the farmers practicing it. All our flour and ingredients come from local South Australian and Australian regional mills and farmers.
METHOD
Flour, water, salt and leavening agents are all that is needed to make a basic food that has fed the world for thousands of years. While each region, village, and household may have developed its own approach, bread has remained a common thread of humanity. In the hands of craftsmen this basic food becomes extraordinary.
At Rustico, each loaf gets the same level of attention that a baker would have hundreds of years ago with each and every single loaf that leaves our bakery prepared and moulded by hand. We pair this technique with slow fermentation, which requires 16 to 48 hours. More control over gluten and fermentation ensures we can balance acidity and maximize the taste and texture of every loaf.
Traditionally bakeries were at the heart of each community, at the centre plaza of each village. A single oven baking for the entire village, where people gather and connect. This led us to wholesale artisan produce in an attempt to maintain some of these age-old traditions and to offer our own local community the best possible and healthiest breads possible in today’s mass production era.
WHOLESALE
We deliver fresh sourdough and speciality breads to most Adelaide suburbs and hills. Some regional customers organize weekly pick-ups from our bakery. The team bakes all night to have fresh bread every morning except Sundays. We maintain a strict account limit to maintain the highest quality. Some waiting period has applied in the past.
